Just a quick visit

My dear Bakers Anonymous family, I’m moving in just over a month. And the above city (that’s Baltimore, in case you didn’t know), is destined to be my new home. I visited there this past weekend to a little recon, and would you believe it? I didn’t eat a single baked good!

Okay. I had an apple danish at the continental breakfast on Monday morning, but I was not about to take a picture of it. My grammy made me change out of my pajamas because she didn’t think it was appropriate for me, in my Courier Post Deal Chick t-shirt, to be wandering amongst the good, clean people.

Pft.

So, that’s where I was this weekend. Enjoy the pretty scenery and I’ll do my best to be back next week with some deeeeelicious no-bake treats. It’s not like I don’t have enough of them tacked away on my Pinterest board.

Happy Father’s Day

Hey there, Bakers Anonymous family.

So, tomorrow is Father’s Day. And for as long as I can remember, I have been a daddy’s girl to the core. I’m the oldest out of five, and the most like my father; in my earliest recollections, I wandered the town at my father’s side, “helping” him with computer and alarm work.

And even though I haven’t lived at home for nearly five years, I still love to spend time with my daddy, quoting lines from our favorite movies and television shows, discussing the trials of owning cars (that don’t want to work all the time) and sometimes sharing recipes.

This would be the part where I list out five of the favorite recipes I’ve come across this week in my Internet travels, but to very honest with you, this has been a slow week for all of us. Instead, please check out my to-bake list and gather up some baking inspiration of your own.

Chocolate covered Oreos

Bakers Anonymous family, change sucks, doesn’t it? Sometimes change can be great, like when you change your hairstyle or when you decide that maybe it’s okay to go to school without your “security hoodie” anymore. And sometimes, a change can represent the loss of an important person or place. For me, this time around, it’s the latter.

As of today, my newspaper office is officially closed. I’m in a new office, working for the same paper, but without the team that kept me sane since I first showed up as a desk editor last October. We laughed about so many stupid things – conspiracy theories, weird occurrences heard over the police scanner and yes, even our fair share of arguments. We’ve forgotten to place ads, structured pages wrong and forgotten to correct copy-editing mistakes. And now, after what seems like much longer than my eight months, I’ve been forced to depart from that team and hole up in an office already packed with people.

Not really looking forward to it, to be honest.

But, in the spirit of keeping the last day light (and making a treat that I’d seen on Pinterest), I brought in these chocolate-covered Oreos.

Because I’m just that awesome.

These were a total hit in the office. And the best part is that you can customize these any way you want – different colored coatings, sets of sprinkles and maybe even a surprise inside the cookie? :) Go crazy!

Chocolate Covered Oreos

Ingredients
1  15.5 oz package of Reduced Fat Oreos (Hey, we’re already coating them in chocolate. Why not help everyone out a little?)
1 16 oz package of Candiquik (I found this at my local Target in the baking supplies section, but if you can’t find Candiquik, candy coating or white chocolate will work well)
1 container of sprinkles or other toppings

Directions
1. Cover a cookie sheet in foil.
2. Follow the directions on the Candiquik package to melt the chocolate (mine took one and a half minutes to melt in the microwave).
3. Carefully roll the Oreos in the coating. Place the covered Oreos on the foil. Immediately dash on some sprinkles (or whatever toppings of your choice).
4. Refrigerate for up to ten minutes before placing into decorative bags, etc.

My tray of Candiquick produced 25 covered Oreos, but I’m not stingy with the chocolate. It was a think coating. Mmm. I could have made these on sticks, too, but I think I need Double Stuffed Oreos for that.

Saturday Recipe Round-up

It’s Saturday again, and what a week this has been! I’m stressed out to the max with my job search (who isn’t these days?) and the work that I’m currently doing at my office. It’s commencement season, which means lots and lots of invitations, certificates, programs and more.

Oh. And the clients want everything by next week.

Yay.

So, to calm down, I dug up some delicious recipes to share with you. Let’s see what I uncovered, eh?

Confessions of a Cookbook Queen has stolen my heart, once again, with her recipe for Devil’s Food Mini Donuts. Not only does it require NO frying (I really do hate heating up a pan of oil. Ew), but it also comes with a sweet chocolate frosting!

As usual, Alaska Mom made a beautiful new treat this week, Chewy Coconut Peanut Butter Chocolate Chip Bars. He recipe titles are even longer than mine! And you knew I was going to feature this bar recipe once I saw the word, “coconut,” in the title.

One of these days, the weather will warm up again, and I will make these classic ice cream sandwiches from Smitten Kitchen, one of the most classy blogging ladies I know. Who doesn’t want homemade ice cream sandwich cookies? I mean, aren’t those the most delicious cookies ever?

Ah, Bakerella. Her amazing decorating techniques never fail to amaze, and her creativity was spent this week on easy little panda cupcakes. The use of chocolate chips and sprinkles are such simple ideas that I wonder why I didn’t think of it before?

And this week’s piece de resistance is something I found trending on Pinterest: Cinco de Mayo pinata cookies from SheKnows. I was absolutely stunned at the sight of these beautiful and original treats. I can’t wait to find the time to make them!
