What is good, Bakers Anonymous?

Yeah. I’m just going to leave that out there and move right onto something else. How about some deliciously simple recipes?

These Neapolitan cupcakes from iheart2stamp combine strawberry cake mix with chewy brownie bottom and vanilla frosting. Feel like mixing it up? Why not top with rainbow chip frosting? Use caramel turtle brownies and yellow cake mix? I love a versatile recipe.

The absolutely NEXT batch of cookies I bake is going to be these Cool Whip cookies with Sprinkles from Happy-Go-Lucky. I already have cake mix, sprinkles and one egg. I just need a container of Cool Whip. Saturday afternoon baking, here I come!

Looking for a bright, sweet (and holiday-like) cookie? Try these cherry chocolate kisses from The Curvy Carrot. I love maraschino cherries, milk chocolate kisses (I’m so going to buy a bag tomorrow) and almond extract. These are definitely going on my t0-bake list!

Sometimes you just want a change from cookies. Why not make this salted caramel pretzel bark from Mama Say What?! Not just her, but many others have declared this “crack bark.” So addicting, so delectable that you can’t stop eating, even if your tummy starts to hurt.

And if you have more available counter space, make this cookies and cream Oreo breakaway from Bakers Royale. A tray of white chocolate or milk chocolate coating and a sleeve or two of Oreos AND you have yumminess.

Chocolate Cream Cheese MnM Cookies

Hello, everyone! We here at Bakers Anonymous have been all over the place lately. Graduate school, moving to Baltimore, applying to jobs in Maryland and oh yeah, work every day!

This is the part where everyone says, “Oh, boohoos for Niki. Her life is so difficult. We pity her.”

“Not.”

Yeah, that’s what I figured. And if that wasn’t enough, I’ve got boy problems! Goodness.

So yesterday while I was at work, all I could think about was M&Ms. Crunchy, melt-y, yummy M&Ms. And cookies. Not like I don’t already have some sugar cookies left over from last week’s baking, but that’s beside the point. I didn’t have anything chocolate!

But now I do. To make these cookies extra moist and thick, I included some dark chocolate cream cheese.

Oh yes. I did just say, dark chocolate cream cheese. Thank you, Kraft Foods for providing the world with the Indulgence line of cream cheeses. My waistline, however, does not thank you.

Chocolate Cream Cheese M&M Cookies

Ingredients
1 box of Pillsbury dark chocolate cake mix
1 8 oz. container of Philly Indulgence dark chocolate cream cheese
1/2 C softened butter
1 egg
1 tsp. almond extract
1 12 oz bag of M&Ms (I used dark chocolate)
1 C of mini semi-sweet chocolate chips

Directions
1. Preheat the oven to 350 degrees.

2. Beat together the egg, butter, cream cheese and almond extract.

3. Mix in the cake mix until thoroughly absorbed.

4. Add in the M&Ms and chocolate chips. The batter will be thick.

5. Roll the dough into one-inch balls, making sure to tuck in the M&Ms and chocolate chips.

6. Space out on foil-lined cookie sheet and bake for 15 minutes.

7. Remove to cooling rack.

Makes about four dozen cookies.

Saturday recipe round-up, week 8

Ah, June. What do we here at Bakers Anonymous think of this month? Not much, to be honest. June is the herald of summer, our least favorite season. Unless you have primo air conditioning (like I currently do at my house), the desire to make baked goods is absolutely nowhere to be found. And while I love no-bake treats as much as the next person, sometimes you just want a chewy, fresh-baked cookie, you know?

These strawberry lemonade cupcakes from Confessions of a Cookbook Queen perfectly express the summertime sentiments without bringing all the nasty humidity into your house. I just love the bright colored frosting!

Cookie Madness brings us this sour cream chocolate and butterscotch chip cake that is actually more of a loaf than a real cake, and requires no extra rising time. And did you notice that delicious-looking glaze on top? I did.

More summer madness is brought to you by Krissy’s Creations: red velvet funnel cake! Let that one sink in again – red velvet funnel cake. Mmm. I can smell the carnivals and farm fairs already.

If you don’t want to fry anything, let these baked confetti donuts take center stage at your picnic table. All you need is a donut pan (why, why, why don’t I have one of those yet?) and a jar full of sprinkles. The Sweet Life even baked them straight into the batter!

I love oranges and I love white chocolate chips, but I don’t love creamsicles. They just taste super nasty to me. Perhaps these pretty orange creamsicle cookies from Six Sister’s Stuff will taste much better than their ice cream counterparts? Here’s hoping.

Saturday Recipe Round-up

Bakers Anonymous, it’s Cinco de Mayo!

And to me, that means absolutely nothing except recovering from the crazy time I had last night (huzzah for besties and “family” reunions!) and looking at wonderful recipes. Let’s see what’s happened this week, shall we?

Breakfast on a Stick – fact or fiction? Rather, I think it to be the most ingenious idea ever. Babble’s Family Kitchen has hit upon a brilliant idea with this sweet and simple breakfast. I love waffles, I love fruit and I love Cool Whip.

How don’t know how she does it, but Alaska Mom has come up with yet another wonderful recipe – Skillet Cream Puff Pie. Not only does this pie look delicious, but it’s also tres, tres simple. Hopefully, I’ll be brave enough to tackle this treat soon!

Blueberries. Cream cheese. Coffee Cake. What could be better than combining all three of these things? Confessions of a Cookbook Queen came up with this delectable breakfast? lunch? dinner? dessert? (who cares?) recipe; I really think it’s the cream cheese that puts it over the edge.

So, Lemon Curd is something I’ve never really thought about doing, but this simple, six-ingredient recipe from Satisfy My Sweet Tooth actually inspires me to go into the great culinary unknown. I can do this! I can do this?

And to wrap it all up, this wouldn’t be Bakers Anonymous without a tad more cream cheese? These cream cheese chocolate chip cookies from Bake or Break could quite possibly become my go-to cookie.

Saturday Recipe Round-up

Good afternoon, Bakers Anonymous! It’s Saturday, and I’ve got stuff to do. Am I going to do it? Probably not. And that’s quite all right with me. In other news, it’s time for our weekly recipe round-up. We’ve got plenty of sweet treats for you to enjoy.

Alaska Mom made these delicious looking Banana Chocolate Chip cookies. I agree with her note to put walnuts into the cookies. Who doesn’t want a sweet crunch with their chocolate?

I found these amazing Oreo Cheesecake Bites at Six Sister’s Stuff, a blog I recently discovered on my many (many) perusings of the Internet. My favorite part of the recipe is that the cheesecake only needs to bake for 45 minutes and doesn’t require a water bath. Simplicity at its finest.

The ever lovely Confessions of a Cookbook Queen created these exorbitantly delicious Chocolate Cookies and Cream Cupcakes. Did you notice that the chocolate frosting is dipped in chocolate?!

Feeling adventurous, and maybe a little French? Try this banana bread crepe cake with butterscotch from Smitten Kitchen. You can even make the crepes by themselves and enjoy an international breakfast.

My Baking Addiction showcased these Coconut-Mocha Cupcakes. I am a huge coconut fan, not so much on the mocha, but look at that dark color! It looks so rich and dense.
