Recipe Round-Up

Bakers Anonymous family, I’ve moved.

Well, this website hasn’t. We’re still the same wonderful baking website that we’ve always been, just a little bit better. And busier. But where I was once in New Jersey, I have relocated to Baltimore, Maryland.

There are a few bakeries I’m going to try out while I’m here (all two years), so stay tuned for those eye-opening experiences. Or what ever they’re supposed to be called. In the mean time, feel free to let me know any places I should visit!

Now, let’s see what Pinterest has in store for us.

Chocolate. Chocolate. Chocolate. It’s all that’s on my brain right now. And if I had all the ingredients, I would so make these brownies from Eats Well With Others..
Alas, I have left my kitchen with everything behind for this land of … Baltimore.

These light cupcakes from Cake aren’t even made with angel food cake mix, but just six ingredients. Simple, amazing and perfectly portioned.

 

These sugar cookies are made from French Vanilla cake mix courtesy of Sweet Treats & More. I think it’s the French that makes them taste more like homemade sugar cookies.

Semi-Domesticated Mama made these easy cream coconut bars made with Bisquick. This isn’t the first time that I’ve seen coconut cream made with this mix, so I think there’s something to it all.

This cookie dough dip from Chocolate Covered Katie is completely healthy but still tastes like the unhealthy version! It’s made with chickpeas and nut butter.

Recipe Round-Up

Last week was just one hot mess after the other, and I have a feeling that this week will be much similar. The weather is lovely (ish) here in New Jersey, so I’m enjoying not sweating the SECOND I step foot out of my door.

Also, I spent my Saturday at my best friend’s graduation swimming party. I looked as pasty as ever. Go me. My last name’s Reagan. There isn’t much hope for me being anything but pale.

Anyway, check out these delicious treats I found for you!

Confessions of a Cookbook Queen made these yummy white chocolate Oreo chuck cookies. I bet they taste just like HAPPINESS.

 

Smitten Kitchen brightened up her summer kitchen with this sugar dusted peach pie. I haven’t had a fruit pie in like, ever. Time to change that?

 

Speaking of pies, Bakerella brought out summer berries for her sweet tarts. I’ve yet to make anything berry related this season. I’m getting the feeling I prooooooobably should.

 

Bakers Royale ALSO made berry tarts, though she focused on the cheerful flavor of the raspberries. AND SHE ADDED IN CHOCOLATE.
YES. PLEASE.

These butterscotch, walnut and oat bars from Cookie Madness are similar to a blondie, and provide a break from all of our chocolate treats.
But do we really need a break? FOR THESE WE DO.

And that’s today’s round-up. Bear with me as I make my move to Baltimore on Friday. I have a lot of adjusting ahead of me.

Recipe Round-Up (More than a little delayed…)

hey there, Bakers Anonymous family. Umm. This is typically a Saturday event, but I was a tad bit busy. You see …

MY BEST FRIEND GOT ENGAGED! WEEEEEEEE.

I’m more than excited for her (freakin’ thrilled really), and cannot wait to start planning the wedding (I mean, helping to plan the wedding. Check my sweet wedding planning Pinterest board. I have refused to start one for myself because I think it’s ridiculous to plan non-existent weddings. But that’s just me).

So I was a tad bit distracted. And then there was her graduation party. And then there was Freelance Work Sunday.

And now there’s regular work Monday. But guess what? I found all of these awesome brownie-related recipes.

Confessions of a Cookbook Queen made these amazing brownie truffles using pantry staples! And it’s no-bake. With the crazy, million degree-weather we’ve been having lately, why try to bake anything?

Ever heard of brownie batter bark? Well, now you have, AND you have the awesome recipe courtesy of Cookies & Cups.

If you’re looking to cool down, try these brownie sundae bonbons from Bakerella. She uses a delicious (but small) scoop of ice cream in the center and tops it off with a brownie. Keep these in your freezer for an instant bite of happiness.

A great dish to serve at your summer parties would be these Rolo brownie trifles. Layers of ice cream, brownies and the chocolate-caramel confection named Rolos combine to create the perfect warm-weather treat from Bakingdom.

And if you are in the mood for some baking, try Bakers Royale’s brownie sandwich cookies (with salted caramel creme filling!). Chewy brownies plus a simple creme filling make for a tasty, hand-held treat.

Peppermint Patty Brownies

Bakers Anonymous family, just so you know, I received two burns on my arms (one on EACH) in order to pull  these brownies out of the oven. I hope you appreciate the pain I go through for you.

But I do it with love. :)

It’s been a week since my lovely hamster, Butterscotch, passed away, so I figured the best thing to do was to make a treat full of pep and happiness. Since Pinterest exploded onto the Internet in the past two months, I’ve found a ton of new blogs and recipes. Today’s post is adapted from one of those very finds.

Peppermint Patty Brownies

Ingredients:
1 box of brownie mix (I used Ghiradelli Double Chocolate brownie mix)
1 egg
1/3 C applesauce (I no longer use vegetable oil in my baking. It’s one easy way to make your treats healthier!)
1/4 C water
25 York Peppermint Patties (the small ones)

Directions:
1. Preheat the oven to 325 degrees. Line your baking pan (I used a 9×9 pan glass pan) with foil for easy removal.
2. Mix together the egg, applesauce and water.
3. Slowly add in the brownie mix, making sure it is thoroughly incorporated.
4.  Pour two-thirds of the mixture into the pan.
5. Place peppermint patties across mixture, making sure to fill up any holes between the patties by cutting up patties into pieces.
6. Bake the brownies for 40 minutes. If your brownies turn out like mine, I’m sorry. I had no idea the mint filling expanded like that. Top will be shiny but firm.
7. Remove the brownies in the foil from the pan and let rest on a cooling rack. Let cool completely.

This recipe will make one pan of brownies. Number of pieces depends on how you cut them, though I do recommend cutting them small. The peppermint patty pieces add some richness.

Halloween treats: Grab bag brownies

Welcome back to the world of Bakers Anonmous, everyone! I’ve missed you all, and I’ve missed baking. This following recipe isn’t the one that I was going to post a few weeks ago, but as it’s Halloween in a few days, I figured this treat from Hershey’s was a great opportunity to use up that leftover candy (is there ever any leftover?). 

Hershey’s Grab-Bag Brownies

Ingredients:

Any combination chopped HERSHEY’S and REESE’S candy bars to make 2 cups (I used Almond Joys, mini Hershey’s bars and Reese’s cups. I don’t recommend baking Kit-Kats into brownies)

1 C (2 sticks) butter or margarine

2 C sugar

2/3 C HERSHEY’S Cocoa

4 eggs, beaten

3/4 C all-purpose flour

1/2 tsp salt

1/4 tsp baking soda

2 tsp vanilla extract

Directions:

1. Preheat the oven to 350 degrees. Line a baking pan (I used 8×11 in) with aluminum foil. Make sure there’s overhang so you can pull the brownies from the pan later.

2. Remove the wrappers from the candies and chop them into one and a half inch pieces. Don’t be afraid to leave big chunks as a surprise!

3. Melt the butter. I heated it in the microwave for a minute. Add it to the sugar and cocoa. Slowly stir in the eggs. No need for scrambled bits here. (Ew.)

4. Stir together the flour, salt and baking soda. Add the flour mixture in increments, stirring well after each addition. Add the vanilla and candy pieces. Spread into the pan.

5. Bake for 50 minutes or until the brownies begin to pull away from the sides of the pan. Be careful not to overbake!

Niki’s note: the original baking time is 30 to 35 minutes; however, because I lined my pan with foil and the pan was smaller than the originally designated size. I’d rather have a longer baking time than a messy pan to clean! Please note that if you do use a different size pan, times will change.

6. Cool completely in the pan on a wire rack. Cut into bars.

Makes about 36 brownies. As you know from me, I always cut my brownies a little bit larger than average!
